As a full-time working and blogging mama of two, I’ve come to love the easiest recipes I can possibly make (or find!) When I return home from work after a long day, I want to spend time with my girls. I don’t want to slave in the kitchen for hours, in my own element, away from them any longer. Since becoming a mama, I’ve found a love for cooking and baking. I love throwing together equally savory and easy recipes. Most of the time, my recipes are made from ingredients that can be found in your pantry, refrigerator, or freezer.
Tortellini is one of those foods I usually have stored in my pantry. I buy the packages off the shelf and stock up. You can make a pretty easy supper with tortellini alone. I love it. Another favorite of mine is this Spicy Crockpot Chicken Tortellini Soup. If you’re a fan of soups, the mixture of tortellini, spicy sauce, and chicken is delicious in one crockpot.

Speaking of one pan meals, this one can be made using just ONE saucepan! Again, I’m a huge fan of time-saving recipes that have my taste buds blossoming like flowers in the Spring.

Cheese filled tortellini recipes always bring my belly comfort. (Does that scream total cheese head Wisconsin gal? I’ll take it as a compliment either way.)

This 20-minute SUPER easy tortellini will have your mouth watering with every bite. The tender tortellini and melt-in-your-mouth mixture of five cheese and rich Italian sauce will leave you feeling happy and satisfied.
The entire meal, from start to finish takes a mere, 20 minutes. That’s a total freaking mom win in my book! Is your mouth watering yet?

20-Minute SUPER Easy Tortellini
  • Duration: 20 minutes
  • Serves: four people
  • Ingredients
  • 18 oz. bag tortellini
  • 1/2 bag frozen meatballs
  • 1 1/2 cups Barilla pasta sauce
  • 2 cups fresh or frozen spinach
  • 1 1/2 tsp minced onion
  • 14.5 oz can diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp oregano
  • pepper to taste
  • Optional: parmesan

  1. Bring water to a boil in a large pot. Once boiling, add the tortellini. Boil for about 8 minutes (or follow the directions on the back of the packaging.)
  2. While the tortellini is cooking, microwave the half bag of frozen meatballs for 1-3 minutes (again, check packaging for suggested amount of time.)
  3. Cut meatballs up into small pieces. I cut one meatball into pieces of 8. Set aside.
  4. Once tortellini is tender, drain the water and place back in the same pan. Put the burner on warm. This is generally the lowest heat.
  5. Add meatballs, sauce, spinach, and diced tomatoes to the mixture. Stir until well combined.
  6. Add all spices to the mixture and ensure they are even throughout.
  7. Let the meal cook until warm or desired temperature. Remove from burner.
  8. That’s your 20-minute super easy tortellini! Top with parmesan, if desired.
