Braised Moroccan Style Chicken

Fragrant with heady spices and exotic flavor, this dish combines the spicy, sweet and salty flavors that are synonymous with northern Africa. Perfect for entertaining, as it can be prepared a day ahead. Serve it family style on a large platter, on pillows of couscous.

∙ Serves 4
8 Chicken legs and thighs, bone-in
1/2 cup Apricots, dried pitted
1 Bay leaf
2 cloves Garlic
1 Onion
3 tbsp Parsley
6 Plum tomatoes, ripe
1/2 cup Prunes, pitted dried
Canned goods
1 cup Chicken broth
1 tbsp Tomato paste
1 cup Green olives, good quality pitted
Baking & spices
1/4 tsp Cinnamon, ground
1 Salt + fresh black pepper
Oils & vinegars
3 tbsp Olive oil
Nuts & seeds
1/4 tsp Cumin, ground
1 Juice of an orange (freshly squeezed)
