Sichuan shredded pork with garlic sauce (Yu Xiang Rou Si

Signature dish of Sichuan cuisine, shredded pork with garlic sauce delivers a sophisticated and addictive taste: tangy, spicy, sweet & sour.

300 g Pork, fillet
60 g Bamboo shoots
40 g Carrot
2 tsp Garlic
1 tsp Ginger
2 tbsp Sichuan pickled chilli
1 stalk Spring onion
5 tsp Soy sauce, light
1/2 tbsp Soy sauce, dark
Baking & spices
1 1/2 tbsp Corn starch
1 tsp Corn starch / potato starch
1 pinch Salt
2 tbsp Sugar
Oils & vinegars
2 tbsp Black rice vinegar
3 tbsp Cooking oil
Beer, wine & spirits
6 1/2 tsp Shaoxing rice wine
3 tsp Water
60g / 0.5 cup pre-soaked wood ear (about 5g dried, see note 2)
