Mediterranean Chicken Thighs

Mediterranean chicken thighs roasted with potatoes in one pan with roasted red peppers, tomatoes, and capers makes an easy yet delicious and hearty meal.

680 g 1 1/2 pounds potatoes
1 pint Cherry or grape tomatoes
8 cloves Garlic
5 sprigs Oregano, fresh
3 tbsp Parsley
1/4 cup Capers
Baking & spices
280 g 10 ounces roasted red peppers, roasted
1 Salt and pepper
Oils & vinegars
1 Olive oil
