Spicy Vegan Pad Thai

This spicy vegan pad thai is way better than takeout - made with whole food ingredients, and a breeze to throw together!

1 Bird's eye chili
1 Cilantro
1 Large Clove Garlic
1 Lime, Juice from
1/2 cup Scallions
1/3 cup Peanut butter, Smooth
1/2 cup Soy sauce
2 tbsp Sriracha
Pasta & grains
3 cup Carrots or carrot noodles
1 lb Long pasta
Baking & spices
1 Black pepper
1 Red pepper flakes
Oils & vinegars
2 tbsp Neutral oil
3 Cups Snap Peas (washed and ends trimmed)
