Vegan summer pasta

Vegan summer pasta uses the best of summer produce and takes little time to make. It also makes a great pasta salad. Dairy-free, can be also gluten-free.

∙ Serves 2
4 Charred artichoke heart, halves
8 Cherry tomatoes
1 good pinch Chilli flakes
200 g Courgette / zucchini
2 Garlic cloves
1 Parsley, fresh
2 Tomatoes, large ripe
2 tsp Balsamic vinegar
8 Kalamata olives
Pasta & grains
200 g Rigatoni or penne pasta, GF
Baking & spices
1 Salt and black pepper
1 good pinch Sugar
Oils & vinegars
20 ml Olive oil, extra virgin
