Instant Pot Mexican Casserole

This easy and delicious Instant Pot Mexican Casserole will make the whole family smile It tastes just like Chicken Enchiladas without all the work!

1 lb Chicken breasts, boneless
1 15 ounce can Black beans
1 Choppped fresh cilantro
1 cup Corn, canned
2 large cloves Garlic
1/2 tsp Oregano, dried
1 cup Yellow onion
Baking & Spices
1/4 tsp Black pepper
1/2 tsp Paprika
1/4 tsp Sea salt
Oils & Vinegars
1 tbsp Olive oil
Nuts & Seeds
1 tsp Cumin
Bread & Baked Goods
8 Corn tortillas (cut into 8 pieces)
2 cups Cheddar cheese
1/2 cup Queso fresco or monterrey jack cheese
1 Sour cream/greek yogurt
2 cups Enchilada sauce
